Dr. Cory Szybala, a naturopathic physician and nutrition educator, is one of the original lead physicians of the Food As Medicine Institute at National University of Natural Medicine in Portland, Oregon and an adjunct faculty member in the Master of Science in Nutrition Program. In his private practice, at Grain Integrative Health on SE Belmont in Portland, Oregon, Dr. Szybala provides an integrative approach to primary care focusing on family medicine and men’s health.
Raised in the Midwest, Dr. Szybala graduated from Indiana University with a B.A. in biochemistry and minors in psychology and biology. Having spent much of his life in the healthcare field, Dr. Szybala was excited to pursue a type of medicine that combines the benefits of our current medicine model with that of a more holistic, preventative and individualized approach, otherwise known as naturopathic medicine.

Test your mouth-mind connection. A program started by Ecotrust and Edible Portland, Blind-Tasting Bingo at OMSI is a game of sensory deprivation and heightened exploration. In the game, Bon Appetit Executive Chef, Kit Zhu, will present 14 distinct bites that players taste with their eyes covered, seeking to identify what they taste on a bingo board that includes both correct and false answers. A few lucky winners will take home fun prizes!

Crickets, mealworms, and beetles, oh MY! Did you know that almost a third of the world’s population eats insects as part of their daily diet? The World Health Organization recently promoted the eating of insects, known as entomophagy in the science world, as a more sustainable source of protein. Come learn all about the environmental and nutritional advantages of eating insects. We’ll try a variety of different bugs from our bug buffet, and we'll grind up crickets to use as flour for cookies!

Explore the wonderful world of cheese making! We’ll learn the art and science of making cow’s milk fresh mozzarella cheese in this class. Participants will sample a variety of cheeses, make their own mozzarella, and learn several recipes using their homemade cheese.
Recommended for ages 8 and up with an adult, 14 and up without. General Admission is not included in the price of the ticket.
